Æblerov [Aeblerow]; Scavenging apples

In Scandinavia, our climate is perfect for apple cultivation. We boast century-old fruit orchards deeply entrenched in the soil, exhibiting strong terroir expression and hosting hundreds of ancient indigenous apple varieties overlooked for cider production. something we found nonsensical and that wanted to challenge.

Inspired by the Nordic food movement, we committed to using indigenous Nordic apples and challenging the notion that cider must rely solely on traditional French or British cider apple varieties. Together with our Scandinavian peers, we spearheaded the new Scandinavian cider movement, producing lean, crisp, acidic ciders reminiscent of wine more than traditional cider. A category of wines and ciders that derserve their own place in the wineworld, and today can be found in beer bars, wine shops and top end restaurants. And hopefully supermarkets in the future.

What began as a hobby project in a garage has evolved into a full-fledged winery outside Copenhagen, annualy producing 85,000 liters of cider, wine, and innovative hybrids combining cider, wine, sour beer, and spirits. Today, we consider ourselves an open-minded winery, welcoming all apples, fruits, and grapes.

While our methods have progressed, the rebellious spirit of Æblerov endures: A winery daring to challenge the status quo of cider and wine.
